This camping recipe is a perfect way to give your family a filling meal that’s packed with veggies. This dish is easy to prepare and only takes one pot, so you’ll have easy clean-up too. Get the full recipe below.
Ingredients
- 1 zucchini
- 1 yellow summer squash
- 4 oz. cherry tomatoes
- 2 cloves garlic
- 1 tbsp. oil
- 4 oz. pasta
- 1 tsp. salt
- 2 oz. goat cheese
- Lemon juice, optional
Instructions
- Wash and dry all your produce.
- Carefully slice the zucchini and squash in half, lengthwise and then into 1/4″ half moons.
- Cut all the cherry tomatoes in half and mince the garlic.
- In a large cast-iron skillet, heat a drizzle of oil.
- Toss in the veggies in and sauté until just soft.
- Remove the veggies from the skillet and set aside while you prepare the other ingredients.
- Pour the pasta, salt, and enough water to cover the pasta into the skillet. Bring the water to a boil, and cook until the pasta is tender. Approximately 10 minutes. Be sure to stir frequently to ensure it cooks evenly.
- Remove the skillet from the heat and stir in the goat cheese. Be sure to combine until the pasta is thoroughly coated. Add in the veggies, stir again, and drizzle with a squeeze of lemon juice.
- Serve warm with a hearty bread!
